Oatmeal Energy Bites

Hiiii everyone!! I’m going to be posting many more recipes this summer because I have spent so much of my time lately testing new combinations in the kitchen. Yay! For today’s post, I’m sharing my newest obsession, these little energy bites. Made with delicious & wholesome ingredients, these make a perfect snack or dessert for any time of day, and recently I have been crumbling a few of them on top of my smoothies or yogurt bowls. All of the ingredients will give you sustained energy and provide fuel while tasting amazing. The recipe below can definitely be adjusted to use whatever superfoods you have on hand—sunflower seeds, vanilla extract, shredded coconut, and chocolate chips all work well mixed into the base recipe. These keep best stored in the refrigerator or freezer!

recipe (makes about 12-14 balls, but can easily be doubled to have extra)

ingredients:

1/2 cup oats

1/4 cup chia seeds

1/8 cup ground flax seeds

1/4 cup almond butter/any nut butter of choice

3 medjool dates chopped up (or about 1/8 cup honey or maple syrup instead)

sprinkle of pink Himalayan sea salt (optional but takes flavors to the next level!!)

lots of cinnamon :)

instructions:

  • mash up ingredients in bowl

  • roll into balls

  • store in the fridge or freezer

  • and enjoy! yummm
