Quick Blueberry Scones (vegan!)

Today I made these simple and delicious blueberry scones and they were too good not to share—like the whole batch is almost gone since baking this morning! And somehow they taste flaky & buttery without any dairy???!! I love making secretly healthy recipes that my whole family loves!

Soooo I have been seeing versions of this recipe around social media and had to test it myself. The base “dough” only requires a few ingredients, and after that the add-in ingredients are totally up to you!

ingredients

2 cups flour of choice- I used gf flour but AP/oat flour should work as well

1 cup coconut milk from the can- should be the creamy and thick kind!

1.5 teaspoon baking powder

1/2 cup coconut sugar

pinch of sea salt

any add-ins you want! for these, I used fresh blueberries and lemon zest. any other fruits or chocolate chips would be nice!

steps

  1. mix dry ingredients together first

  2. stir in the coconut milk and then blueberries (be sure not to over mix to maintain a fluffy texture!)

  3. roll dough into one large or two smaller circles, about 1 inch thick

  4. freeze dough for a few minutes, cut into triangles

  5. bake at 400F for about 15 min and you’re done! enjoy!
