The LaJosette Green Smoothie Bowl
As it starts to get warmer out, I crave cold and refreshing breakfasts in the morning, and thick smoothies/bowls have been my favorite weekend treat! This recipe works well for breakfast or even a snack. To make the bowl more filling than just eating fruit, hemp seeds and almond butter add amazing plant-based proteins/fats! I also love adding greens or veggies into my smoothies because adding greens to fruits helps balance your blood sugar levels in the morning and are amazing for skin health to glow from within! This recipe is just one of many delicious green smoothie variations, and feel free to play around with ingredients you have at home. The recipe is enough for one person but can easily be scaled to make multiple bowls! Enjoy!
bowl ingredients (measurements are estimated):
1/2 to 1 cup frozen spinach (can be substituted with kale or other leafy greens)
1 cup frozen mango
1 large ripe banana (better of frozen but ok if not)
1 large medjool date
cinnamon
unsweetened coconut milk
optional: bit of frozen riced cauliflower, superfood powders/seeds, cacao nibs, nut butter, etc!
In a high speed blender (I use Vitamix), blend ingredients and 1/2 of the banana with a small dash of milk to start and push chunks around blender with the tamper tool. Starting with less liquid is better to achieve a thick ice cream consistency!
top with:
other half of the banana sliced
lots of hemp seeds
sprinkle purely elizabeth granola
shredded coconut
big scoop almond butter
add anything else you like and get creative!
P.S. I love to put a bit of granola in the bottom of my bowl before pouring in the smoothie so that there are still toppings left as I reach the end!
Et voilà! This is soo refreshing and yummy especially for the summer time. The date adds a caramel taste and almost cookie dough-like texture to the bowl along with the cinnamon, which both completely mask the taste of the greens blended inside! I honestly just eyeball most of the ingredients to my liking, so don’t worry too much about exact measurements as long as you have a good fruits-to-greens ratio! Using frozen ingredients is key to achieving the perfect texture, and this recipe can even be consumed as a smoothie by adding a bit more liquid, and you can also adjust to add any other superfoods you like!
